ANZAC Biscuits

ANZAC Biscuits

Ingredients
1 cup of plain flour.
1 cup of rolled oats
1 cup of brown sugar.
1 cup of desiccated coconut.
125 grams chopped butter.
2 tablespoons of golden syrup.
1 1/2 teaspoons bicarb soda.
1 tablespoons of boiling water.
Method
Preheat oven to 160C.
Line 2 trays with paper.
In a large bowl, combine the flour, oats, coconut and sugar.
Place the butter and golden syrup in a saucepan and heat over low heat.
In a jug, whisk the bicarb and the water together.
Once the butter has melted into the golden syrup, remove from the heat and add the bicarb mix, stirring to combine.
Pour this into the flour mix and mix well.
Use a tablespoon to portion the mix, rolling them into balls before placing on the trays, allowing room to spread.
Bake for 8 minutes, swap trays then bake for a further 8 minutes.
Allow to cool for 5-10 minutes on trays before removing to wire racks to cool completely.
