Apple muffins

Apple muffins
Makes 12

Ingredients
1 1/2 cup self-raising flour.
50 grams margarine.
1/2 cup caster sugar.
1/2 cup milk.
1 egg, lightly beaten.
425 gram can pie apple, chopped roughly.
1/4 teaspoon nutmeg.
2 teaspoons brown sugar.
2 teaspoons toasted oats.
Ice cream to serve.

Method
Preheat oven to 180 C.
Grease a 12 hole muffin tin.
Sift flour into a bowl and add margarine.
With your fingertips, rub the margarine into the flour until it resembles bread crumbs.
Add sugar and stir through.
Into a bowl, combine milk, egg and 1 cup apple.
Stir into flour mixture until just combined. (Don’t over mix – batter should look lumpy).
Divide mixture between muffin holes.
On a board, finely chop the apple that remains, and carefully spoon over muffin batter.
Mix oats, nutmeg and sugar together. Sprinkle over the apple.
Bake muffins for 20 to 25 minutes, until cooked through.

Serving
Serve muffins warm with ice cream.
