Baked Apples with Sultana Crumble

Baked Apples with Sultana Crumble

Ingredients
6 Anzac or ginger snap cookies.
1/4 cup plain flour.
1/4 teaspoon cinnamon.
30 grams unsalted chopped butter.
35 grams sultanas.
4 pink lady apples.
Method
Preheat oven to 170°C. Line a baking tray with baking paper.
Place cookies in the bowl of a food processor and process until they resemble rough crumbs.
Transfer crumbs to a clean bowl.
Add flour, cinnamon and butter, rubbing the mixture between your fingers until it resembles coarse crumbs.
Stir through sultanas.
Slice the top quarter off apples, and set the ‘lids’ aside.
Remove the core from each apple.
Place the apples on prepared baking tray - along with the ‘lids’.
Divide the cookie mixture evenly amongst each apple.
Bake for 20 minutes or until apples are tender and the crumble is golden brown.
Serving
Serve hot with cream, custard or ice cream.
