Banana Stuffed Pork Fillet

Banana Stuffed Pork Fillet
Serves 4

Ingredients
1kg pork fillets, about 250 grams each.
1 cup seasoned plain flour.
4 small or 2 large bananas.
100 mL Pernod.
100 grams butter.
2 cooking apples, peeled, cored and diced.
2 pears, peeled, cored and diced.
Salt and Pepper to season.
1/4 teaspoon sweet paprika.
1/4 teaspoon celery salt (not essential).
3/4 cup of thickened cream.

Method
Slice the fillets to make pocket for half a large or a small banana.
Toss the fillets in the flour.
In a non stick pan over medium heat, melt the butter and fry the fillets until well browned and cooked through, 10-15 minutes.
Add the pernod, carefully ignite the alcohol if you are confident to do so, other wise cook for 1 minute to evaporate alcohol.
Add the chopped fruit and cook for 2-3 minutes or until fruit is softened.
Add the cream, stir through and gently heat.

Serving
Serve over flavored rice or a pilaf, place fillet on rice and top with creamy fruit sauce.
