Basic Italian Tomato Pasta Sauce

Basic Italian Tomato Pasta Sauce
Makes 8 serves. Freezes well for up to 3 months.
Prep time : 5 minutes

Ingredients
2 800 gram tin of diced tomatoes.
2 400 gram tins of tomato puree.
2 cups beef stock.
2 cups red wine.
4 large brown onions, finely diced.
4 tablespoons tomato paste.
8 cloves of garlic, crushed.
2 small red chilies, finely diced (optional). Remove membranes and seeds for less heat.
1/2 cup finely chopped fresh basil leaves.
1/2 cup finely chopped flat leaf parsley.
1/4 cup olive oil.

Method
Heat the oil in a large non stick saucepan over medium heat.
Add onions, cook for 4-5 minutes, or until they gain some colour.
Add the garlic and optional chili, cook for 1 minute.
Add the diced tomato, tomato puree, stock, wine and tomato paste.
Stir in the basil.
Gently bring to a simmer, cook uncovered until the sauce becomes thick and fragrant, about 50 minutes.
Add the parsley off the heat and stir through.

Serving
Serve over your choice of al dente pasta, top with fresh grated parmesan and good crusty bread.

Tips
Freeze in meal size portions, allow about 200 grams of sauce per person. Reheat in microwave from frozen for a quick and healthy week day meal.
