Beef and Veggie Burgers

Beef and Veggie Burgers

Ingredients
250 grams lean beef mince.
1 brown onion, grated.
2 small zucchini, grated. Squeeze to remove excess liquid, discard liquid.
2 small carrots, grated. Squeeze to remove excess liquid, discard liquid.
1 tablespoon fresh grated ginger.
1 egg yolk.
1 tablespoon light soy sauce.
4 hamburger buns, split and toasted.
3 tablespoons mayonnaise.
1 clove garlic, crushed.
Lettuce and tomatoes to make burgers.
4 slices of tasty cheese (optional).
Olive oil spray.
Method
Mix crushed garlic into mayonnaise and set aside.
Mix the mince, onions, carrot, zucchini, soy, ginger and egg yolk in a bowl, working with your fingers to combine well. Season and mix again.
Heat a non stick pan over medium heat, spray lightly with olive oil.
Using a half cup as a measure, add the patties to the pan and flatten with a spatula sprayed with a little oil.
Cook 3-4 minutes per side, until golden and cooked through.
Serving
Dollop 1/4 of the mayonnaise mix onto the base of each bun, top with a cooked patty, cheese (optional) lettuce and tomato.
