Beef Fried Rice

Beef Fried Rice
Serves 4

Ingredients
400 grams finely sliced beef strips.
400 grams baby corn. (pre cook if fresh, drained if in tins)
300 grams bean sprouts.
300 grams brocolli florets, pre cooked.
2 eggs, beaten
4 spring onions, cut into 2 cm lenghts then quartered lengthways.
3 cups cold steamed rice.
1 teaspoon sugar.
3 tablespoons light soy sauce.
3 tablespoons hoisin sauce.
1 teaspoon sesame oil.
2 tablespoons peanut oil.

Method
Marinate beef strips in the sugar and 1 tablespoon of soy. Mix well to coat and set aside.
In a wok, heat 1 tablespoon of the peanut oil over a medium heat.
Add the egg and swirl to make 1 large omlette.
Fry until egg is cooked through, remove to cool then roll and cut into thin strips.
Heat 1 tablespoon of the remaining oil over high heat, add the beef and cook for 2 minutes.
Add the spring onions, corn, bean sprouts and brocolli, toss to combine and cook for 2 minutes.
Remove to bowl.
Heat the last tablespoon of oil to the wok and heat over medium heat.
Add the rice and toss to coat it in the oil.
Add the remaining soy and stir fry for 2 minutes.
Return beef and vegetables to the wok, toss through.
Return egg to the wok and toss through with the sesame oil.

Serving
Serve heaped onto a serving tray in the middle of the table, allow people to serve themselves.
