Beef in Hoisin Sauce

Beef in Hoisin Sauce

Ingredients
600 grams of lean beef, cut into strips.
2 tablespoons peanut oil.
1 medium onion, sliced thinly

1/2 teaspoon fresh grated ginger.
2 cloves garlic, crushed.
1/4 cup hoisin sauce.
2 tablespoons dry sherry.
1 tablespoon vinegar.
2 teaspoon cornflour, dissolved in 2 tablespoons water.
Method
Heat 1 tablespoon of the oil in a wok, until smoking.
Cook beef in 2 batches, allowing wok to return to full heat before starting second batch.
Remove meat from pan, retain juices.
Add the onion, garlic and ginger to the pan, cooking for 2-3 minutes.
Recduce heat slightly, add remaining vegetables to the wok, stir fry for 2-3 minutes.
Add the beef back to the pan, plus any juices.
In a jug combine the hoisin, sherry, vinegar and corflour mix, combining well.
Pour this mix into the wok, stir until sauce becomes thick.
Serving
Serve over rice.
