Bok Choy Fried Rice

Bok Choy Fried Rice
Serves 4 as a side

Ingredients
2 tablespoons of teriyaki marinade.
2 cloves of garlic, crushed.
3 bok choy plants, washed and drained. Thinly slice stems and shred leaves into 1cm strips.
2 eggs, lightly beaten.
1 1/4 cups of basmati rice.
Oil spray.
Method
Cook rice as per packet instructions. Drain and set aside.
Heat a wok over medium high heat.
Spray lightly with oil, then add eggs and swirl to form 1 large omlette.
Cook egg until set, fold and remove to drain on absorbent paper.
Spray wok with more oil, add garlic and bok choy stems, stir fry for 2 minutes.
Add remaining bok choy leaves and cook until wilted.
Add rice and stir fry for 2-3 minutes.
Slice egg into thin strips and add to pan.
Add teriyaki marinade, stir through and serve.
