Char Grilled Chicken Skewers

Char Grilled Chicken Skewers

Ingredients
600 grams cubed chicken, thighs will give best flavour.
2 tablespoons soy sauce.
1 tablespoon white vinegar.
8 skewers (soak bamboo skewers for 30 minutes in water).
3/4 cup of sweet chili sauce.
Method
Combine soy, vinegar and sweet chili sauce in a mixing jug to form the marinade.
Thread chicken on to pre soaked skewers, place in a dish and pour over marinade.
Refrigerate for 30-60 minutes.
Pre heat a grill plate and spray lightly with olive oil.
Cook chicken 4-5 minutes per side, or until cooked through. Turn regularly and baste with marinade.
DO NOT baste with marinade once there is less than 3 minutes left to cook.
Serving
Serve over rice with a fresh green salad.
