Cheesy Veggie Hot Pots

Cheesy Veggie Hot Pots
Serves 4 as a side

Ingredients
400 grams mixed seasonal root vegetables such as carrots and potatoes.
400 grams mixed seasonal vegetables such as pumpkin, broccoli and cauliflower.
60 grams of butter.
1/4 cup plain flour.
2 cups low fat milk.
1 cup grated tasty cheese.
Method
Preheat oven to 180C.
Grease a 6 cup capacity baking dish.
Add all vegetables to a microwave proof dish, add 1/4 cup of water and microwave on high for 5 minutes. Stop and stir halfway through.
Drain well and add vegetables to baking dish.
Melt the butter in a saucepan over low heat.
Add the flour, and cook for 2-3 minutes. Stop if flour begins to brown.
Remove from heat, add 1 cup of the milk and whisk until smooth.
Add remaining milk, then return pan to the heat and cook until it begins to thicken, stirring constantly.
Once thickened, add half the cheese, stir until melted then remove from heat.
Pour over veggies in the baking dish, mixing gently to coat all.
Sprinkle remaining cheese over the top and bake for 15-20 minutes, or until top is golden and mix is bubbling.
Serving
Allow to sit for 5 minutes before serving.
