Chicken and Tortellini Soup

Chicken and Tortellini Soup

Ingredients
1.5 litres of chicken stock, shop bought or make your own with this recipe.
200 grams of fresh tortellini, any stuffing is OK.
1 chicken breast.
2 small carrots, peeled and cut into 2 cm pieces and then quartered lengthways.
2 small potatoes, diced into 1 cm cubes.
1 generous handful of spinach leaves, washed and drained.
Salt and pepper to season.
Method
Bring the stock to the boil.
Add the chicken breast and vegetables.
Cook for 5 minutes, then add the tortellini.
Remove the chicken breast 2 minutes before tortellini are ready.
Shred the chicken with two forks.
Serving
Divide the chicken meat and the spinach leaves between 4 bowls.
Spoon over the tortellini and vegetables, allow each person to check for their own seasoning.
