Chicken, Bacon and Spinach Pasta

Chicken, Bacon and Spinach Pasta

Ingredients
600 grams of chicken mince.
200 grams diced bacon shortuct rashers (mostly meat, very little fat).
100 grams baby spinach leaves.
2 cloves garlic, crushed.
1 large brown onion, finely diced.
1 stick of celery, diced.
1 large carrot, peeled and diced.
2 400 gram tins of diced tomatoes.
1/2 cup chicken stock. Shop bought is OK or check out this no fuss chicken stock
recipe.
1 tablespoon dried basil.
1 tablespoon dried parsley.
1 tablespoon olive oil.
Method
Heat the oil in a frypanover medium heat.
Add the onion and cookuntil softened, about 2-3 minutes.
Add the garlic and cook until fragrant.
Add the bacon and chicken mince, constantly breaking up the chicken until it is cooked through.
Add the tomatoes, basil, stock and parsely and stir through.
Add the celery and carrot and then turn the heat down to a simmer and cover, cooking for 15 minutes or until carrot is tender.
Add the spinach leaves and stir through before serving.
Serving
Serve over spaghetti or fettucine and top with fresh grated parmesan.
