Chicken Pasta Bake

Chicken Pasta Bake
Serves 4
Prep time : 10 minutes

Ingredients
300 grams pasta (penne or spirali).
1 onion, finely chopped.
300ml light thickened cream.
310 gram can corn kernels, drained.
2/3 cup frozen peas.
1/2 cup grated parmesan.
1/2 barbecue chicken, meat removed and roughly chopped.
Salt and pepper.
1 cup low-fat tasty cheese.

Method
Cook the pasta in a large saucepan of salted boiling water following packet directions.
Drain and set aside.
Place a frying pan over medium heat and add a little oil.
Add the onion and cook for 5 minutes until soft.
Add the cream, bring to a simmer and cook for 2 minutes.
Add the corn, peas, parmesan and chicken and stir through.
Cook for 2-3 minutes further, then add the pasta.
Season with salt and pepper. Stir until well combined.
Preheat an oven grill to a medium heat.
Transfer the chicken mixture into a 4-cup capacity baking dish.
Scatter with the cheese and place under preheated grill.
Grill for 3-4 minutes or until golden on top.

Serving
To serve, sprinkle with chopped parsley.
