Choy Sum with Satay Beef

Choy Sum with Satay Beef

Ingredients
600 grams lean beef strips.
1 large brown onion, halved and thinly sliced.
1 red capsicum, halved and thinly sliced.
1 bunch choy sum. Remove stems and finey chop, tear leaves in half.
2 clove garlic, crushed.
1 red chili, finely sliced (remove membrane and seeds for less intensity).
2 tablespoons of peanut oil.
1/4 cup crunchy peanut butter.
1/2 cup coconut cream (use evaporated milk and coconut essence for a less fatty meal)
2 tablespoons sweet chili sauce.
2 tablespoons oyster sauce.
Method
Heat 1/3 of the oil in a wok until smoking.
Add half the beef and stir fry to seal all over. Remove to a bowl.
Repeat with remaining beef.
Turn heat down to medium, add the remianing oil.
Add onions, garlic and chili and fry 2-3 minutes.
Add the capsicum and choy sum stems, cook another 2 minutes.
Return beef and any juices to the wok.
Add the peanut butter, coconut cream, sweet chili and oyster sauces.
Stir to heat through and coat all ingredient with the sauces.
Add the choy sum leaves, stir until wilted.
Serving
Serve on a bed of fragrant jasmine rice.
