Citrus and Herb Chicken

Citrus and Herb Chicken

Ingredients
2 whole chickens (2 x 1.2kg each), washed and dried – backbone removed, and pressed flat.
100 grams butter, at room temperature.
1/3 cup pistachio kernels, chopped finely.
1 tablespoon orange rind, grated finely.
2 teaspoons fresh sage, chopped.
Olive oil cooking spray.
Method
In a bowl mix together butter, pistachios, orange rind, and sage.
Carefully separate the chicken breast skin from the flesh using fingers.
Push the butter mixture under the skin.
Spray a barbecue plate or chargrill with oil and cook the chicken, skin side down for 10 minutes, until golden.
Turn and cook under barbecue hood or covered with foil, for 40 minutes or until juices run clear when skewer is inserted into thickest part of the chicken.
Allow to rest for 10 minutes.
Serving
Cut chicken into portions and serve.
