Coconut and Coriander Rice
Serves 4 as a side

Ingredients
1 1/2 cups basmati rice, washed and drained.
1 red capsicum, finely chopped.
1/2 cup dessicated coconut.
1/3 cup of coriander leaves.
Method
Cook rice as per packet instructions.
Drain, return to pot and stir in coriander, capsicum and coconut.
