Crispy Baked Potato Wedges

Crispy Baked Potato Wedges

Ingredients
1 kilogram of floury potatoes.
1 cup of olive oil.
1 1/2 cups of fine bread crumbs.
1/4 cup of dried dill.
1 teaspoon of chicken salt.
1 teaspoon of garlic powder.
1 teaspoon of dried rosemary.
Method
Preheat oven to 200C non fan forced.
Cut each potato into at least 8 wedges.
Mix the dry ingredients together in a bowl.
Dip each wedge into the olive oil, then transfer to the breadcrumb mix and coat each wedge well, then place the wedge onto a baking tray.
Bake for 25 minutes, then turn on the oven fan or increase the temperature to 210C in a non fan forced oven.
Bake for a further 20 minutes or until the wedges start to lightly brown and crisp up.
Notes
If you double the ingredients, or are baking another dish such as our “Hot and Spicy Chicken Wings” increase the cooking time to an hour for both dishes.
Options
Basil, oregano and chives all make excellent substitutes for the dill. Basil goes particularly well with a fish mains, oregano is great with beef or lamb and chives will go with just about anything.
