Crumbed Corned Beef Parcels

Crumbed Corned Beef Parcels
Serves 4

Ingredients
4 thick slices of corned beef.
1/2 cup shaved tasty cheese.
2 teaspoons mixed herbs, – basil, oregano and parsley are a good mix.
1/2 cup seasoned plain flour.
2 eggs, beaten.
1 cup dried bread crumbs.
1/2 cup fresh grated parmesan.
Oil for frying.

Method
Carefully cut a pocket into each of the corned beef slices.
Stuff a 1/4 of the tasty cheese into each of the pockets.
In a bowl, combine the herbs, parmesan and bread crumbs.
In another bowl, place the beaten eggs.
Dust each of the corned beef slices in the seasoned flour, dip to coat in the eggs then press into the bread crumb mix.
Ensure all parts of the corned beef slice are coated in the crumb mix.
Cover and refrigerate for 30 minutes before cooking.
Heat the oil in a pan over medium heat.
Cook the cutlets for 4-5 minutes each side, until they are golden brown.

Serving
Serve with hash browns and mixed steam vegetables.
