Curried Beef Pie

Curried Beef Pie
Serves 4

Ingredients
600 grams beef mince.
600 grams floury potatoes, peeled and diced.
400 grams tinned diced tomatoes.
1 clove of garlic, crushed.
1/2 cup beef stock.
2 tablespoons curry powder (heat of your choice).
2 tablespoon chopped fresh chives.
1/4 cup fresh grated parmesan.
100 grams sour cream.
1 tablespoon olive oil.

Method
Heat oil in a saucepan over medium heat.
Bring a large pot of salted water to the boil, add the potatoes and cook 15-20 minutes, or until tender.
Add onions, cook for 5 minutes.
Add garlic, cook for 1 minute.
Add curry powder, cook for 1 minute or until fragrant.
Add mince, brown well cooking for abut 5 minutes. Stir constantly and break up large clumps of meat.
Add tomatoes and beef stock, reduce heat to a gentle simmer and cook until potatoes are ready.
Pre heat oven to 180C.
Grease a 6 cup capacity baking dish.
Drain potatoes, mash then add half the parmesan, sour cream and chives and mix in well.
Spoon mince mix into baking dish, even out the layer.
Top with an even layer of the potato mash, sprinkle parmesan on top of mash then bake for 10-15 minutes, or until top is golden brown.
