Easy Tuna Salad

Easy Tuna Salad
Serves 4

Ingredients
400 grams tinned tuna in olive oil, undrained.
200 grams cherry or grape tomatoes, halved.
1 baby cos lettuce, leaves roughly torn.
1 small red onion, finely diced.
1 lebanese cucumber, quartered and diced.
1 green capsicum, diced.
2/3 of a cup of marinated feta, drained.
2/3 cup of pitted kalamata olives, halved.
2 tablespoons fresh chopped oregano.
1/4 cup of red wine vinegar.

Method
Add lettuce, tomatoes, onion, capsicum, feta and olives to a large bowl.
Add tuna and drizzle with red wine vinegar.
Season lightly with salt and pepper, toss through the oregano leaves just before serving.

Serving
Serve with good crusty bread.
