Ham and Tomato Lasagne

Ham and Tomato Lasagne

Ingredients
Olive cooking spray.
400 grams reduced-fat ricotta cheese.
1 egg yolk.
1 cup fresh basil, chopped.
200 grams fresh lasagne sheets.
1 1/2 cups tomato pasta sauce.
200 grams shaved ham, chopped .
4 tomatoes sliced.
Basil to serve.
Method
Preheat oven to 180C / 160C fan-forced.
Spray a lasagne dish (5cm deep, 16cm x 25cm base) with olive oil.
In a bowl combine the ricotta, egg yolk and basil.
Season this mix with salt and pepper.
Place two lasagne sheets on base of the dish.
Spread half of the ricotta mixture over the lasagne, and then layer with 1/2 cup of the tomato sauce, half of the ham and one third of the tomatoes.
Repeat.
Top with the remaining lasagne sheets, sauce and finish with the tomatoes.
Spray with olive oil.
Cook for 40-45 minutes or until lasagne is tender.
Serving
Stand for 5 minutes before cutting.
Serve topped with basil and crusty garlic bread.
