Ham and Vegetable Fritters

Ham and Vegetable Fritters
Serves 4
Prep time : 10 minutes

Ingredients
250 grams quick cooking brown rice.
1 cup chopped leg ham.
1/2 cup self raising flour.
1/2 cup of milk.
1/2 cup tzatziki dip.
2 eggs, beaten.
1 large onion, finely diced.
1 large carrot, peeled and grated.
1 large zuchinni, grated.
4 spring onions, finely sliced.
2 tablespoons of olive oil.

Method
Set a pot of water to boil, cook rice as per packet instructions.
Preheat your griller to high.
Heat 1 teaspoon of oil in a griller-safe non stick fry pan, fry onions until soft, about 4 minutes.
Remove to a bowl.
Whisk milk and eggs together, add to flour and mix until a smooth batter is formed.
Add vegetables and ham, mix well to distribute.
Add rice and onions and mix well to distribute.
Heat remaining oil in the frypan over medium heat.
Pour in batter mix and shake pan to settle to a uniform thickness.
Cook until the mixture begins to set, about 10 minutes.
Place under griller and cook for a further 5 minutes, or until middle is set and top is golden brown.

Serving
Stand fritter for at least 5 minutes. Slide out onto a large plate, cut into wedges and top with tzatziki before serving.
Excellent with a rocket leaf salad.
