Healthy Chicken Nuggets

Healthy Chicken Nuggets
Serves 4
Prep time : 10 minutes

Ingredients
500 grams chicken breast, minced.
1 zucchini, grated and squeezed to remove excess juice. Discard juice.
1 carrot, peeled and grated.
300 grams tinned corn kernels, rinsed and drained.
1 egg, beaten.
1/2 cup fine dried bread crumbs.
Cooking oil spray.

Method
Preheat oven to 180C.
Line baking tray with baking paper.
Mix all ingredients, except oil and bread crumbs into a bowl and combine well.
Using a tablespoon of mixture at a time, shape into nuggets and roll in bread crumbs.
Place on tray, spray lightly with cooking oil and bake for 20-25 minutes, or until golden and cooked through.

Serving
Delicious with our crispy baked potato wedges .
