Iced Apricot Cake

Iced Apricot Cake
Makes 16 pieces

Ingredients - Cake
1 cup of chopped dried apricots.
1 cup of caster sugar.
1 cup of sifted plain flour.
3/4 cup of desiccated coconut.
1/2 cup warmed milk.
125 grams butter, chopped.
1 teaspoon vanilla essence.

Ingredients - Icing
2 cups of icing sugar mix.
1 1/2 tablespoons of milk.
1 tablespoon of butter.
1 teaspoon of vanilla essence.
1 tablespoon of desiccated coconut.

Method - Cake
Preheat your oven to 180C.
Grease and line a 26cm x 16cm x 3cm baking tray.
Add the apricots to the milk and stand for 10 minutes.
Add the butter and sugar to a bowl and beat with an electric mixer until light and fluffy.
Add the eggs and vanilla essence and mix in well.
Add the flour and bicarb to the mixture and combine well.
Add the milk and apricots and mix through well.
Pour the mix into the pan and bake for 30 minutes.
Test with a skewer by sticking it into the thickest part of the cake. If it comes out clean the mixture has cooked.

Method - Icing
Melt the butter in a saucepan, and add the sugar, milk and vanilla essence.
Stir until smooth, add more milk if necessary.
Using a spatula, spread the icing over the cake and top with the desiccated coconut.
