Lamb Rogan Josh

Ingredients
1 quantity of Rogan Josh Curry Sauce, to see our recipe click here.
600 grams lamb shoulder, cubed.
1 large brown onion, diced.
400 gram tinned diced tomatoes.
1/2 cup English spinach, discard stalks and shred leaves.
2/3 cup Greek natural yoghurt.
1/2 cup chopped mint leaves.
Oil to fry.
Method
Combine yoghurt and mint, cover and refrigerate until needed.
In a heavy based pan, heat the oil over medium heat.
Add onion, cook for 3-4 minutes or until soft.
Add the lamb, browning all over.
Add curry paste and tomatoes, reduce to simmer and cook covered for 25 minutes.
Stir through spinach and allow to wilt, remove from heat and serve immediately.
Serving
Serve over rice, top with minted yoghurt.
