Minted Sugar Pinapple Slices

Minted Sugar Pinapple Slices
Serves 4

Ingredients
1 large pineapple.
2 tablespoon castor sugar.
10 fresh mint leaves, washed.
1/4 cup lemon juice.

Method
In a mortar and pestle, crush the mint leaves with the sugar.
Peel the pineapple and halve lengthways, then cut into half rounds less than 1 cm thick.
Place on a serving platter, drizzle with the lemon juice.
Top with minted sugar.

Serving
Serve with a nice fruit gelati or sorbet.
