Mushroom, Bacon and Basil Pasta

Mushroom, Bacon and Basil Pasta

Ingredients
2 tablespoons of oil.
400 grams dried penne or similar pasta.
3 cloves of crushed garlic.
1 cup of basil.
4 rashers bacon, rind removed and chopped.
400 grams swiss brown mushrooms, cleaned and sliced.
1 red onion, diced finely.
300 millilitres of cream.
salt an pepper to taste.
Method
Set a pot of water to boil for the pasta. Add pasta and cook as per packet instructions. Sauce requires about 15 minutes, time to be ready when sauce is almost finished.
Heat the oil in the pan over medium-high heat and fry the basil leaves until they turn crispy.
Remove to drain on a paper towel.
Add the bacon, garlic and onion to the pan and fry until bacon slightly crisps and the onions soften.
Add the mushrooms and cook for a further 5 minutes.
Reduce heat to low for the bacon and mushroom pan, and stir through the cream. Simmer gently until the sauce thickens slightly, avoid boiling the sauce for too long or it will split.
Test sauce for seasoning and adjust as necessary.
Drain the pasta and add to the bacon and mushroom pan, tossing the pasta through the sauce to coat.
Serving
Serve to bowls, garnish with the crisp basil leaves and lightly sprinkle with fresh grated parmesan.
