Porcupine Meatballs

Porcupine Meatballs

Ingredients
400 gram tinned tomato soup concentrate.
500 grams lean beef mince.
1/2 cup long rain rice, rinsed.
1 brown onion very finely diced, or grated.
2 cloves garlic, crushed.
1/4 cup fresh flat leaf parsley, chopped.
Method
Bring 2 cups of cold water to the boil.
In the meantime, combine mince, rice, onion, garlic and parsley in a bowl and use your fingers to work the ingredients through the mince.
Once the water has begun to boil, stir in the soup concentrate and return to the boil.
Using a tablespoon as a measure, make small rounded meatballs out of the mince mix.
Gently place the balls into the soup, once all the balls have been made and are in the soup, reduce to a gentle simmer and cook for about 30 minutes, or until rice is soft.
Serving
Serve over mashed potatoes with steamed vegetables on the side.
