Pork with Balsamic and Thyme

Pork with Balsamic and Thyme
Serves 4
Prep time : 1 minutes

Ingredients
4 large pork chops or cutlets, about 200 grams each.
1/2 cup red wine.
1/2 cup balsamic vinegar.
1 tablespoon fresh thyme leaves (or use 1/2 the amount of dried).
Salt and pepper to season.
Oil for frying.

Method
Heat the oil over medium heat in a non stick fry pan.
Season both sides of the pork and add to the pan.
Cook for 30 seconds on first side, or until sealed.
Turn and cook for 5-6 minutes, before turning and cooking until done (about another 5 minutes).
Remove pork and rest under foil.
Add the wine, vinegar and thyme to the pan.
Increase heat and cook until reduced by half, about 5 minutes.

Serving
Rest covered in foil for 3 minutes before serving.
Serve pork and top with some of the balsamic sauce.
