Potted Apple Coffee Cakes

This recipe require 4 one cup capacity ramekins.
Ingredients
2 granny smith apples, peeled.
1 cup sifted self raising flour.
1/3 cup sultanas.
1/3 cup brown sugar.
1/4 cup walnuts, chopped.
2 tablespoons salt reduced margarine.
2 tablespoons milk
1 tablespoon boiling water.
2 teaspoons instant coffee powder.
2 eggs, beaten.
300 grams vanilla yoghurt.
Method
Preheat the oven to 180C.
Lightly grease the 4 ramekins.
Grate the apple into a large bowl.
Add sultanas, brown sugar, flour and walnuts and stir to combine well.
In a small bowl, combine the margarine, boiling water and instant coffee. Mix until margarine and coffee is combined.
Add the milk and eggs to this, whisk well to combine.
Add milk mix to apple mix, and stir well to combine.
Spoon into ramekins and bake for 20-25 minutes, until a skewer inserted into the middle of one of the ramekins comes out clean.
Serving
Allow to stand for 10 minutes before serving (allow to cool to a safer eating temperature), top with a large dollop of yoghurt.
