Prosciutto Cauliflower

Prosciutto Cauliflower
Serves 4 as a side
Prep time : 10 minutes

Ingredients
600 grams cauliflower, cut into bite size florets.
100 grams prosciutto, finely chopped.
2 tablespoons chopped anchovies.
1 tablespoon olive oil.
1 long red chili, deseeded and finely chopped.
2 cloves of garlic, chopped.
1/2 cup fresh basil leaves, torn.
2 tablespoons of lemon juice.

Method
Bring a pot of water to the boil and add cauliflower. Cook for 10-15 minutes, or until cauliflower is tender.
Drain and set aside.
In a non stick pan, heat the oil over medium heat.
Add prosciutto, chili and anchovies, cooking until prosciutto begins to crisp and turn golden, 3-4 minutes.
Add garlic and cook for a further minute.
Add the cauliflower and cook for another 2 minutes, tossing the cauliflower through the prosciutto mix.
Remove from heat, toss through basil and lemon juice.

Serving
Season at the table to taste.
