Rhubarb And Pear Crumble

Rhubarb And Pear Crumble
Serves 4

Ingredients
2 cups sugar.
1 litre water.
1 cinnamon stick.
6 stalks rhubarb, washed and cut into 5 cm lengths.
4 pears, peeled.
1/2 cup plain flour.
1/3 cup brown sugar.
1 cup fruit muesli.
1/2 cup crushed almond biscuits.
80g butter, diced.
Method
Bring water and sugar to the boil, reduce heat and simmer for approximately 10 minutes, or until thick and syrupy.
Place pears into the syrup, cover a tight fitting lid and poach pears over low heat for 25-30 minutes or until tender.
Wash rhubarb well and slice into short lengths.
Place rhubarb pieces into a small non stick pan.
Add a little of the sugar syrup, cover with a lid and simmer gently for 5 minutes or until rhubarb has just collapsed.
To make the crumble mix combine the flour, brown sugar, oats and crushed biscuits into a bowl.
Add the butter and work with your fingertips until it resembles bread crumbs, about 5 minutes.
Cut the pears into chunks once cooked and place into individual dariole moulds.
Top with poached rhubarb and crumble topping.
Place into a preheated 200°C oven for 10 minutes or until crumble topping has browned slightly.
Serving
Serve with a generous amount of double cream and a good dusting of icing sugar.
