Roast Leftovers Pizza

Roast Leftovers Pizza

Ingredients
2 premade pizza bases, about 250mm in size.
2 cups sliced roasted vegetables.
1 cup diced roast meat.
100 grams cherry tomatoes, halved.
1/2 cup grated mozarella.
1/2 cup basil leaves.
1/2 cup basil pesto. Try our pesto recipes.
1/2 cup baby spinach leaves.
1/4 cup rinsed capers.
Method
Preheat the oven to 220C.
Line 2 baking trays with baking paper, place 1 base on each.
Spread the pesto out over the bases.
In a bowl, combine the meat, vegetables, capers and cheese, toss well to distribute.
Divide the mix between the 2 bases, spread it out evenly and top each with basil leaves.
Cook for 10 minutes, then swap over the trays in the oven and bake for a further 5 minutes.
Remove from ove, top with spinach.
Serving
Allow spinach to wilt, slice and serve.
