Salmon and Egg Muffins

Salmon and Egg Muffins
Serves 4
Prep time : 10 minutes

Ingredients
8 slices of smoked salmon.
4 English muffins, sliced in half.
8 eggs.
100mL cream.
1 tablespoon of butter.
4 teaspoons salmon caviar.
4 teaspoons fresh chopped dill sprigs.

Method
Whisk together eggs and cream.
Melt butter over medium heat in a saucepan.
Pour in egg and cream, stirring gently for 2-3 minutes, or until egg begins to set.
Carefully cook, continuing to stir, removing egg from the heat just before it completely sets.
Layer a slice of the salmon on top of each muffin half.
Spoon soft set egg on top of each, top with half a teaspoon of caviar and half a teaspoon of the dill sprigs.
