Sambal Spiced Prawns

Sambal Spiced Prawns
Serves 4

Ingredients
600 grams prawns, deveined and peeled.
125 grams snow peas.
125 grams trimmed broccoli florets.
2 spring onions, finely sliced.
2 tablespoons sambal oelek paste.
1 teaspoon sesame oil.
2 teaspoons sugar.
2 tablespoons peanut oil.

Method
Heat oil over medium heat in a wok.
Add onions and cook until softened, about 2 minutes.
Add prawns and sambal paste, stir fry for 3 minutes.
Add remaining vegetables, sesame oil and sugar to the pan, toss through and cook for another 5 minutes.

Serving
Serve over fragrant steamed rice.
