Sausage Pilaf

Sausage Pilaf

Ingredients
500 grams good quality beef steak sausages.
1 large brown onion, diced.
1 garlic clove, crushed.
1 1/2 cups basmati rice, washed and drained.
200 grams button mushrooms, cleaned and sliced.
400 grams tinned diced tomatoes.
1 1/2 cups of chicken stock. Shop bought is ok, make your own with this easy chicken stock recipe.
1 cup frozen peas.
1 tablespoon olive oil.
Method
Cook the sausages as you wish, fried, grilled or broiled.
In a non stick pan, heat the oil over medium heat.
Add the onion and garlic, and cook untilt he onions soften.
Add the mushrooms and cook for 2-3 minutes.
Add the rice, and cook for 2-3 minutes.
Add the stock and tomato, bring to the boil, then reduce to a gentle simmer and cook covered for 10 minutes, or until rice is cooked.
Add a little water as necessary to stop the rice burning.
Add the peas and cook for a further 2 minutes.
Once the rice is cooked, slice the sausages into 1 cm pieces, toss through the rice and serve.
