Spiced Chicken Skewers with Cabbage Salad

Spiced Chicken Skewers with Cabbage Salad

Ingredients
750 grams chicken thigh fillets, trimmed.
olive oil cooking spray.
1 1/2 teaspoons ground coriander.
1 1/2 teaspoons allspice.
2 teaspoons brown sugar.
2 oranges, rind finely grated .
1/4 red cabbage, shredded finely.
1/4 cup pepitas (pumpkin seeds).
3 green onions, finely sliced.
Method
Dice chicken into 2cm cubes and place in a large bowl.
Add coriander, allspice, sugar and orange rind.
Stir until well mixed.
Thread chicken onto (pre-soaked bamboo) skewers.
Preheat barbecue plate over medium-high heat and cook chicken for 3 to 4 minutes on each side or until cooked through.
Prepare oranges by removing the pith and segmenting, reserving the leftover membrane.
In a large bowl, mix together the orange segments, shredded cabbage, pepitas and onions.
Squeeze the juice from the reserved orange membrane over the salad.
Season with salt and pepper and toss to combine.
Serving
Divide salad and skewers between serving plates and serve.
