Spiced Fruit with Honey

Spiced Fruit with Honey
Serves 4
Prep time : 5 minutes

Ingredients
500 mL lemon and lime bitters soft drink.
1/4 cup honey.
1 cinnamon stick.
100 grams dried apples.
120 grams dried apricots.
100 grams dried pears.
100 grams dried peaches.
300 mL plain Greek or vanilla yoghurt to serve.

Method
Add the soft drink to a saucepan with the cinnamon stick and bring to a gentle simmer.
Add the honey and stir until dissolved.
Add the dried fruits and bring to the boil, before reducing to a gentle simmer for 20 minutes, or until fruit becomes tender.
Discard cinnamon stick.

Serving
Pour off excess syrup and serve to bowls, top with yoghurt.
Note: to refrigerate, retain syrup and cover tightly with cling wrap. Discard syrup before serving.
