Spiced Pork Cutlets with Corn Salsa

Spiced Pork Cutlets with Corn Salsa

Ingredients
4 large pork cutlets, 200 grams each.
1 pack taco seasoning mix, or use our own taco seasoning mix recipe.
Mixed salad greens for serving.
2 tablespoons olive oil.
Corn Salsa
2 cups tinned corn kernels, drained.
200 grams cherry tomatoes, quartered.
1 small red onion, finely chopped.
1/2 cup fresh coriander leaves.
1 tablespoon olive oil.
1 lime, juiced.
Method
Rub the seasoning mix into the pork cutlets, set aside while you make the salsa.
Combine the corn, tomatoes, coriander and onion into a bowl and mix well.
In a small jug, whisk the lime and oil until emulsified as a vinagrette.
Pour over the salsa then stir to coat with the vinagrette.
Heat a ridge grill over medium high heat.
Add the cutlets, sear each side then turn heat down to low.
Cook a further 6-8 minutes each side.
Serving
Lump the salsa onto a plate, serve the cutlet to one side. A fresh wedge of lime on the plate to squeeze over the food after it has been served is a nice touch as well.
