Spicy Mince with Vegetables

Spicy Mince with Vegetables
Serves 4

Ingredients
1 tablespoon of peanut oil.
1 teaspoon of curry powder.
1 teaspoon minced chilli.
1 teaspoon minced garlic.
1 teaspoon minced ginger.
1 tablespoon chopped coriander.
1 onion, finely diced.
½ cup of beef stock.
2 tablespoons light soy sauce.
500 grams lean minced beef.
1 cup bean sprouts.
1 medium capsicum, diced.
4 packets instant (2 minute noodles).

Method
Cook instant noodles as per packet instructions. time them to be ready about 10 minutes after you start the main dish.
Heat the oil over medium heat in a large fry pan or wok.
Add the onion, fry until starting to colour.
Add the curry powder, chilli, garlic, ginger and coriander to the pan and fry until fragrant.
Add the mince and stir and break it down as it cooks until it is well browned.
Add the stock, capsicum, bean shoots and soy sauce, cover and simmer gently for 2 to 3 minutes.

Serving
Separate noodles to bowls, spoon over the spicy mince and serve.
