Steamed Fish with Ratatouille

Steamed Fish with Ratatouille
Serves 4

Ingredients
2 tablespoons olive oil.
1 red onion, chopped finely.
1 small eggplant, diced.
1 clove garlic, crushed.
1 zucchini, diced.
1 small red capsicum, chopped finely.
1 tomato, chopped finely.
1 lemon, rind grated finely, juiced.
1/4 cup fresh basil leaves, chopped.
4 firm, white fish fillets.
Couscous, to serve.

Method
Place a large frying pan over medium-low heat and add oil.
Once to temperature, add onion and eggplant.
Cook stirring constantly for 5 minutes, until tender.
Add garlic, zucchini, capsicum, tomato, lemon rind, 1 tablespoon lemon juice and basil to pan and stir to combine.
Season with salt and pepper and cook stirring frequently for 20 minutes, until sauce has thickened slightly.
Preheat grill to a medium-high heat and line a baking tray with baking paper.
Arrange fish fillets in a single layer and drizzle with remaining lemon juice.
Season with salt and pepper.
Grill for 2 to 3 minutes each side, until just cooked through.

Serving
Spoon couscous onto 4 plates, and top with fish. Serve with ratatouille.
