Stewed Rhubarb

Stewed Rhubarb
Makes around 3-4 cups

Ingredients
850 grams rhubarb stalks.
160 grams of sugar.
1 teaspoon vanilla bean paste.
1 tablespoon of lemon juice.
3 tablespoons of water
Method
Over low heat in a saucepan, dissolve the sugar in the water and lemon juice.
While this happens, cut the rhubarb in 1 cm pieces.
Add to the pan, cover and simmer gently for 10-12 minutes, stirring occasionally.
Remove from pan, cover and refrigerate.
