Thai Prawn Mint Salad

Thai Prawn Mint Salad

Ingredients
2 cups cooked and cooled jasmine rice.
500 grams cooked, peeled and deveined prawns.
1 large avacado, peeled, destoned and sliced.
1 lebanese cucumber, peeled, halved lengthways then finely sliced.
1 red onion, halved and thinly sliced.
250 grams cherry tomatoes, halved.
1/2 cup fresh chopped mint.
1/2 cup picked coriander leaves.
2 tablespoons fish sauce.
1 tablespoon light soy sauce.
1 tablespoon lime juice.
1 teaspoon sesame oil.
1/2 small red chili minced, membrane and seeds removed.
Method
In a large bowl, combine rice, prawns, avacado, cucumber, onion, mint and coriander and mix well.
In a jug, combine remaining ingredients, whisk to combine.
Pour over rice salad, toss to mix sauce through.
