Thai Style Pan-fried Fish

Thai Style Pan-fried Fish
Serves 4

Ingredients
4 x 200 gram firm white fish fillets.
1/4 cup sweet chili sauce.
1/4 cup light soy sauce.
1 tablespoon fish sauce.
1/2 lime juiced.
1 cup jasmine rice, rinsed.
2 bunches broccolini.
Olive oil cooking spray.

Method
Place fish fillets in a shallow bowl.
To a small jug combine the sweet chili sauce, soy sauce, fish sauce and 1 tablespoon lime juice.
Pour half the sauce over the fish and turn to coat.
Cover and chill for 30 minutes.
Cook rice according to packet instructions.
Wash broccolini and place in a snap-lock bag.
Microwave on High for 2 to 3 minutes, until tender.
Pre-heat a barbecue plate to medium-high.
Spray both sides of the fish with oil and barbecue for 1 to 2 minutes each side, until cooked through.

Serving
Spoon rice onto plates and top with fish. Spoon over reserved sauce and serve with steamed broccolini.
