Vanilla Infused Fruit Salad

Vanilla Infused Fruit Salad
Serves 4

Ingredients
1/2 cup castor sugar.
1 vanilla bean, split length ways.
1 star annise.
1 cup of water.
1 teaspoon lemon juice.
3 peaches, skinned and sliced.
3 nectarines, sliced.
1/4 rockmelon, skinned and diced.
1/4 watermelon, diced.
125 grams blueberries.
125 grams fresh pitted cherries.
250 grams strawberries, hulled and halved.
Method
Bring the water to a simmer, add the sugar, vanilla pod and star annise and simmer gently for 5 minutes.
Remove from heat and chill.
Serving
Strain syrup, mix in lemon juice and toss fruit through the syrup before serving to bowls.
Delicious with a frozen yoghurt or fruit sorbet.
